In Huehuetenango coffee plantations reach very high altitudes up to 2000 msnm thanks to the warm winds coming from Mexico. This “place of the ancestors” is very dependent on coffee and most producers process the coffee themselves. La Mochilita is a blend from their 3 farms: El Rincón, Terrazas and La Bolsa. it is also a blend from Red Bourbon and Caturra varieties. These farms located on La Libertad town has 133 hectarea surface area, where shade crops provide quality production on a limestone soil typical from Huehuetenango region, which brings all the typicality of this terroir. All coffee is produced at La Bolsa as it is the only one with a wet mill, supplied by a water spring so the water used to wash the coffee come directly from the soil, which doesn’t go through any pipes or machines, it’s a pristine, pure drinkable water. The fermentation last from 16-30h depending on the weather, as temperatures can reach 33-35ºC. The coffee dries on patios with constant moving to avoid fermentation.
